If you've taken to juicing in the new year, you've likely realized how much fiber and pulp you're tossing out after making a fresh batch of juice for your detox. In December when I made a more conscious effort to add juicing to my every day life, I knew I had to figure out what to do with the produce pulp that was left over. So I made vegetable crackers made only from produce fiber to fill you up and clean up your kitchen... And they taste amazing.

Veggie Fiber Crackers 

/// Ingredients /// 

  • Juice pulp
    • The pulp I used here was from a batch of juice with 3 small beets, a handful of kale, 1/2 a meyer lemon, 4 celery stalks, 2 small apples, 2 medium carrots.
  • Salt or old bay seasoning

Take juicing pulp and flatten it onto a parchment paper lined cookie sheet. Make it THIN and even so baking time is minimized and it is dehydrated evenly. Salt the top or use old bay seasoning. FYI, you're going to probably season again after you pull them out of the oven. Don't over-do-it before because there's no going back if you over salt. Test again after baking. Bake at 200 for about 2 hours. You're going to need to watch it closely since depending on the fibers you're using and your oven, it can cook faster or slower. The goal is to dehydrate and crisp the fiber but not crisp it to oblivion. Check back often since ovens vary greatly! 

Serve with hummus or plain!
