If I hear 'breakfast is the most important meal of the day' one more time I think I might keel over. To me, all food is important and sometimes hearing these basic nutrition mantras from everyone and their Mamma is tiresome. Oh, my other favorite usually starts with "Dr. Oz said...". Anyway, I do need to agree with the crucialness of breakfast as part of a healthy day. A few years ago I could get away with skipping breakfast if I was in a rush, but these days I am dead to the world and a hangry not so nice girl if I miss it. Since the husband is also doing some crazy active things for work, if he doesn't have breakfast, being dizzy and not fueled is just dangerous. Side note: as I write this post, I just got a text from him he forgot breakfast and is "dying". Needless to say, we started to emphasize filling and super nutrient dense breakfasts: Enter the Protein Breakfast Power Bowl. 

Protein Breakfast Power Bowl Recipe

I recently started treating breakfast like lunch and dinner in my house. No more toast. No more single piece of fruit. Plain carbohydrates, even if they were complex carbs (more fiber, more nutrition goodness), are not enough. I think the American 'decision' that breakfast is minimal protein and no vegetables is so weird. Starting your day with protein to keep you full and powerful past 9 AM and vegetables (COME ON- seriously one of the best things you can do for your body), is something you need to start doing today. 

Protein Breakfast Power Bowl Recipe

Mexican Protein Breakfast Power Bowl

/// Ingredients ///

  • Mexican Tofu Black Bean Mix
    • 1, 16 oz can rinsed black beans
    • 1 pound firm tofu, drained and crumbled
    • 1 packet taco seasoning
    • 1/2 yellow or white onion, chopped
    • olive oil
  • Scrambled Eggs
  • Avocado
  • Sriracha
  • Quinoa 

/// Directions /// To make the Mexican tofu mix: Drain and rinse the black beans. Drain and crumble the tofu by flaking it with a fork. In a cast iron skillet (THE BEST) or pan, add a little olive oil and add chopped onion. Sauté for a few minutes until the onion becomes translucent and starts to smell sweeter. Add in the crumbled tofu and taco seasoning. Stir so the tofu is coated. Throw in black beans and mix. If you're serving up the bowl now, keep going until it's heated through. If you're going to prep it for later use, you can turn off the stove and let it cool before storing. 

To build the bowl: Add the tofu mix, scrambled eggs, sliced avocado, quinoa and Sriracha. 

 

I'm so in love with this breakfast. It takes no time if you prep everything so it's easy to build in the morning. If you're going to do one thing for your health this week, make it this bowl!
