It's July, it's hot and no one wants to turn on the oven to cook. I can understand that. With the bounty of fresh produce, why would you even need to heat anything anyway? This month's Recipe Redux challenge is to take advantage of pure produce without heat. Since I'm inundated with figs, I'm sharing a pretty sexy but simple appetizer of fresh figs, stuffed with whipped honey cinnamon goat cheese. The tangy goat cheese balances the strong and sweet figs while the cinnamon gives a warm undertone...no heat required! The best part is you can prepare these well in advance and keep them in the fridge until needed.

Ingredients:

  • 4 oz goat cheese
  • 2 T light sour cream
  • honey
  • cinnamon
  • 5 fresh figs

To make: add goat cheese to a standing mixture with sour cream and whip using the whisk attachment until fluffy. Cut figs in an 'x' pattern from the top of the fig and fill with the whipped mixture. Drizzle with honey and sprinkle with cinnamon. How are you enjoying raw produce this summer?
