Tropical Winter Fruit Salad with Spirulina Sugar

We're headed back to the USVI/BVI this week, so we figured this next recipe should bring some tropical weather to you wherever you are. This tropical fruit salad with spirulina sugar is brimming with fruit you can actually get your hands on at this time of year. It's citrus season, so much of the base plays with the variety of citrus available. From blood oranges to grapefruit and kumquats, the colors are as different as the flavors. We also added some starfruit (because it's adorable) and mango but skipped that passion fruit you see on the side. Hypothetically I think it would have worked but we were both a little weirded out by the texture to add it in the mix. 

This is an easy make-ahead recipe for a brunch (or just a bad-ass fruit platter for yourself). Spirulina sugar gives it a special touch in terms of nutrition and ingredients, but more importantly, the earthy tones in spirulina help mellow out the citrus.

  • white grapefruit
  • pink grapefruit
  • blood orange
  • navel orange
  • minneola orange
  • kumquats
  • star fruit
  • fresh mint
  • diced mango
  • spirulina and sugar (2:1 sugar to spirulina)

/// Directions /// Slice peels off of citrus. Slice star fruit and kumquats. Dice mango. Layer fruit and top with fresh mint. Dust gently with spirulina sugar just before serving.
