Desserts can be tough for people from a balanced nutrition perspective. But mini tarts with a healthy filling and a quick glaze of honey...yeah we can definitely work that in. Yesterday I was in Richmond, VA giving a presentation to a couple hundred dietitians. More specifically, a cooking demo of blueberry gingersnap parfaits with information on Lactose Intolerance. And I made dessert. Gutsy, I know. But mini desserts are a great option for any get together, and they absolutely work when you tweak recipes for health.
With these mini tarts instead of a typical cream filling, I whipped goat cheese and Greek yogurt together. For crunch, I chopped walnuts on top (omega three's for beauty foods, bonus!) and swiped clover honey across the top. The honey adds a floral note and elevates the dish more than white sugar would.
Light Goat Cheese Honey Walnut Mini Tarts
- 1/2 C Goat cheese
- 1/4 C Chobani Greek Yogurt, 0%
- Walnuts, chopped
- Clover Honey
- Phyllo Dough
- Butter, melted
Directions: Layer phyllo dough and melted butter into individual mini tart pans (mine are from Williams Sonoma). Bake until crisp per package directions. If you want to get this project done really quick, pick up some pre baked mini tart crusts and don't tell anyone. Add goat cheese and Greek yogurt to a bowl/standing mixer and whip together. Pipe into the mini tarts and top with chopped walnuts. Swirl honey over the top.
