Broiled Peaches with Rum Whipped Cream

Go get your summer peaches. Like tomatoes, peaches are one of those produce items we do-not-buy if they're out of season. Peak peaches: that's a life experience. And although these do involve a broiler (or a steady, non-accident prone hand with a torch), they do make a great summer dessert because they don't have significant oven time. 

There are a bunch of broiled peach recipes out there in the recipe world, but here's why we recommend this recipe: the rum whipped cream. Back in high school, Chris's mom would always make a boozy whipped fruit dip. Rum was the alcohol of choice for everything (she live in the Carribean now, remember?). And while her version was made with cool whip (perfect for huge batches for parties and honestly more long lasting than this recipe), we make it with freshly whipped cream. The whipped rum cream is great on many, many things...waffles, schaum tortes....spoons? So with the peaches, cream, and a drizzle of honey with pistachios it hits all those flavor and texture profile markers Chris and I encourage: salty, sweet, crunchy, creamy, savory.

Broiled Peaches with Rum Whipped Cream

Dessert: Makes 8 servings

ingredients

  • 4 peaches, cut in half, pit removed
  • 1/8 cup granulated sugar for dipping
  • honey
  • roasted ,salted pistachios, chopped 
  • optional: serve with honey comb

WHIPPED TOPPING INGREDIENTS

  •  1 pint of heavy whipping cream
  •  2 tablespoons of sugar
  •  1/4 cup of sugar
  •  3 large egg yolks
  •  1/8 cup of rum
  •  1/2 teaspoon of vanilla

DIRECTIONS

To make whipped topping: Add egg yolks, sugar (the larger portion), rum, and vanilla to a pan on the stove on low heat. Whisk together and cook until the mixture is thick. Remove from heat and chill. Beat cold whipping cream with the remaining sugar in a chilled bowl. Fold in rum mixture. 

To broil peaches, dip cut halves face down into granulated sugar. Broil for several minutes until browned. Top with whipped cream followed by pistachios and honey.
