Summer is for sandwiches. Our sandwich consumption intake peaks as the weather gets warm. Sandwiches are fast (so you can get back outside!), they have delicious layers of texture and flavor, and they’re an excellent pairing for the bounty of summer produce sides available. If a sandwich isn’t a weekly rotation standard, you’re doing it wrong.

For a sandwich that feels way fancier than it is (5 ingredients…including the bread), consider adding heat. Sure, that seems a little counter-intuitive for summer, but trust me when I say adding a layer of toasty, melty goodness to something more fresh makes a sandwich a meal, not a slapdash afterthought. While you could toast it in a standard pan inside, you could also throw this on an outdoor griddle or even on cast iron over a campfire.

The other part that takes this sandwich to a more “gourmet” feeling moment is the condiment. Singular. Condiment. That’s all it takes. Mustard is the king of the condiment section in our fridge. At any given moment we probably have four or five varieties of Maille from classic Dijon to whole grain and beyond. The Maille Rich Country Mustard is perfect for this sandwich since it still packs a punch that’s needed to balance out the sharp cheddar, but has a rich, creamy more mayonnaise-like texture which helps with a lower fat, dryer sandwich filling like turkey breast. Like I said, a sandwich is all about layers of texture and making things work together. You can use each simple ingredient to make up for the potential shortcomings of the other ingredients.

When deciding what apples to use, I’d say use your favorite crisp variety. Virginia apples are outstanding and keep so well in the fridge so you can pick up a big batch to use for snacking, making crisps, or adding into sandwiches. While I’m using Gala apples here, you can use your preferred variety. Just don’t forget to pick up some summer produce to pair alongside your sandwich! There’s nothing better with a sandwich then a summer melon or berries and basil.
