The piñata cake I mentioned last week is something I can't get out of my head. It was such a great concept (major kudos to that blogger) that I wanted to rework it to be a little healthier. And so, the berry filled piñata cake happened this weekend.

This cake is actually quite simple to make with a few short cuts. For instance, I had absolutely no intention of making a cake from scratch for this project, so it's from a box. The concept of the filled pinata cake is to find a shape, hollow it out, fill it and reconnect the two sides. In retrospect, I would have loved to re-connect the sides with a jam instead of more frosting.

Berry Filled Piñata Cake

Ingredients:

  • 1 cake mix & necessary add ins of your choice, I used vanilla
  • 1 icing of your choice, I used vanilla but a whipped cream would be gorgeous
  • 2 pints berries

Directions: Mix the cake mix per instructions. Pour half of the batter into a pyrex bowl so the batter is 1/2-3/4 of the way filling the dish. To make a small cake, you only need 1 cake mix. If you want a large cake, you'll probably need 2 boxes. Bake until a toothpick comes out of the cake clean. Allow to cool and bake the second cake half in the same sized container.

Once both cakes are cool, use a melon baller to remove the centers of each side of the cake. A melon baller is sharp enough to remove the cake without smashing it. You need to leave enough behind so the cake will hold its shape. Once both sides are hollowed out fill with berries and frost (or use jam) the rim of each cake side. This will act as the glue. Place both halves together and frost the exterior and garnish with berries. 

This cake has so much party potential. It would be stunning for a bridal shower cake. Or the piñata cake could become a gender reveal cake-filled with blueberries or raspberries as needed.
