During the holidays some of the best gifts are hand made…preferably edible.  And while cookies are fab, sometimes you have sweets overload in the house. Regardless of how good the gift tastes…it's just not appealing. Home made mixes are a great alternative where the giftee gets to enjoy the gift whenever they're craving it. This month's Recipe Redux challenge was just that: create a shelf stable mix. So from salad dressings to baked goods be sure to check out some of the recipes members created to spark your gift giving ideas.

This spicy millet salad is great as a taco filling or salad topping. More importantly, it can be part of a balanced meal in a time of a sugar over dose. Because dietitians give people they love fiber. It's how we roll.

Spicy Millet Salad Mix

///Ingredients///

  • 1 cup dry millet
  • 2 cups chicken or veggie stock
  • salt to taste
  • 1/8th teaspoon cumin, ground
  • 1/4 teaspoon roasted red pepper flakes
  • 1/4 teaspoon chipotle 

///Directions/// Add millet and stock to a medium sized pot. Bring to  boil then reduce to low. Simmer for 15 minutes or until the liquid is absorbed by the millet. Cover and let sit for 10 minutes. Serve over a bed of greens, with sautéed kale or as taco filling. 

 

For extra cute wrapping, drop off the mix in a jar and bring along a bouquet of kale!
