Almond Coconut Frozen Grape Truffles

For as long as I can remember, I've been a chocolate lover and fervent coconut hater. Not even 'dilike-er'. Serious coconut hatred. One candy bar in particular that was regularly doled out during Halloween was an almond and coconut blend, covered in chocolate. I'm not going to mention any names here, but it rhymed with Smalmond Smoy. I'm sure my face could never hide the dissapointment of recieving said candy bar.... but for some reason within the past year, I've really had a thing for coconut. So in an effort to re-create the same flavors of that once detested candy bar, I created a frozen grape truffle with a Greek yogurt shell slash coconut holder and a drizzle of chocolate over top.
Almond Coconut Frozen Grape Truffles
Frozen yet tropical, easy skewered desserts
///Ingredients/// Makes 12 individual 'truffles'
- 12 red grapes, frozen
- 1/2 C 0% Greek Yogurt
- 1 generous tablespoon wildflower honey
- 1/4 teaspoon almond extract
- 2/3 C sweetened coconut flakes
- Chocolate Sauce of choice
///Directions/// Mix yogurt, vanilla and almond extract until combined. dip in frozen grapes, to completely cover with yogurt mixture. Place in shredded coconut and roll until covered. skewer and suspend over bowl. freeze for 15 minutes. Drizzle chocolate sauce of choice over the top. freeze again
They kind of remind me of little snow balls. Easy to pop in your mouth in a single bite. Easy to serve at a party on skewers. You get just a hint of the chocolate, all you really need, before the aroma of the coconut and almond hits you and then you bite into what turns into almost a creamy grape center.
