It’s no secret we are big advocates for cooking using sous vide cooking methods (and these udon noodle short ribs-chef’s kiss!) . It’s very precise, ensuring a perfect steak every time. But I also believe in not buying things you won’t use. So if you just never see yourself using precision cooking….don’t! The majority of people do however have ovens and stovetops and if you do, you should have a thermometer.

That’s because a standard oven has a massive degree differential between what you set it to and what it actually does. The away around that is to get a thermometer so you can know what the reality is.

For this recipe, we’re cooking a porterhouse steak. It starts with crusting the steak in seasoning and searing on the stove. From there, you’ll insert a probe thermometer and transfer both the skillet and steak into the oven until a certain temperature is reached. No guess work if 17 minutes means what it does for person A as it does for person B’s oven.
