By stuffing sweet and spicy peppadew peppers with tart goat cheese for protein and crunchy baby cucumbers for texture and fiber you have the perfect poppable. Insert toothpick here.
I also like to add some freshly ground black pepper for extra spunk. This is coming from the girl who can only deal with 'mild' salsa, so really, it's a good thing! The tart and creamy goat cheese balances out the big flavor of the pepper. The cucumber also adds nice texture but also a cooling element.

- Peppadew peppers (find them jarred or at your grocery's olive bar)
- Goat cheese
- Baby hot house cucumbers
- black pepper
///Directions/// Chop cucumbers. No need to seed this small and sweet variety. Fill pepper with cucumber and goat cheese, alternating until full and the final layer is goat cheese. Grind black pepper over the open side of the pepper and refrigerate until you're ready to party. Each pepper uses about 1 tablespoon of cucumbers and 1.5 tablespoons of goat cheese.
