Here in the US, we're used to seeing watercress in salads or sometimes on sandwiches, but abroad watercress ends up in lots of soup (watercress potato soup, minestrone, and egg drop to name a few). In our recipe, we're adding it on top of pizza for a fresh burst of color and flavor. It's a side salad...but on your entrée.
