Spring fresh snap pea and brown butter herb salad
A refreshing, craveable spring salad that brings warm brown butter peas to the table with crisp spring radishes, snap peas and herbs. The perfect side dish to a light fish or a hearty simple steak with butter and flaky sea salt.
Ten out of ten times we volunteer to bring a vegetable side dish to a party. Number one, I think people expect us to (being a dietitian does have its downsides). But secondly, it’s fun to bring something other than mixed greens and help people try new things (you’ll eat it and you’ll LIKE IT).
Each season we like to try something new. It’s important to us that a side vegetable dish have lots of shape and textures. That means we go in knowing we want a crunchy element with a balance of flavors. Almost always there’s a fresh herb involved.
This recipe for a spring snap pea salad has been added to our revolving favorites. I highly recommend it for spring before it gets too crazy hot since the brown buttered peas are a nice temperature contrast to the otherwise cool veggies.
