I have wanted a dehydrator for years now. Every autumn, I always wish I had more ways to preserve summer produce. Freezer space is a premium (no garage freezer here!) so the easy act of slicing fruit to freeze lasts for about two gallon bags before I have to abandon ship. Sure, there’s canning, and I know I could learn how to do it well, but there’s a small food safety part of me that has flashbacks to a a chapter on botulism and listeria from my undergrad nutrition classes. Enter: dehydrating produce.

For those short on freezer space, dehydrating fruit can be a fantastic way to preserve the season in a shelf-stable way. Not only can you dry fruit for mixing into trail mix or eating plan, but you can also make your own healthier fruit leathers, baked goods, and even superfood powders (just place it in a high powered blender after!).

Since trail mix is as simple as mixing your favorite dried nuts, seeds, and fruits together, I wanted to show how you can add dried fruit to make-ahead breakfast or snack items. These breakfast ‘cookies’ are super kid friendly and healthy. They use a mix of whole wheat flour, oats, seeds, coconut, and nut butters to make an all in one breakfast.
