Graduation Brunch Menu
If you're looking for a unique brunch menu that will wow guests, it's time to skip the tea sandwiches. Instead, I'm recommending what my Dad whipped up for college graduation the other weekend. With an Asian flair and lots of flavor, you'll love this change from the 'usual'. Don't limit this menu to a graduation brunch though. You could also use this for a bridal shower, or morning before the races.
Brunch With A Twist
- Sangria
- Fresh Fruit Platter: Strawberries, Cantaloupe, Apples, Oranges
- Coconut Soup and Rice Noodles: with add your own toppings including mint, thai basil, gingered carrots, bean sprouts, zucchini, snow peas, peanuts, lime
- Roasted Asian Glazed Chicken and Rice
- Butter Cookies
I love that this menu covers all the bases: There's a vegetarian option, a meat option, lightness from the fruit, and a bright drink. Sangria is the perfect party drink because it can be pre-mixed and placed in a pitcher. There's no need for exact measurements like in many mixed drinks.
Here's how we make sangria:
- 1 bottle sweet red wine
- 2 T sugar
- 1/2 C orange juice concetrate
- thinly sliced limes, lemons, oranges
- ice
Add the wine, orange juice, and sugar to a large pitcher (we use a pewter pitcher because it keeps the drink cold...and because my parents are pewtersmiths) and stir until combined. Add in ice and fruit, mixing thoroughly to distribute evenly.
