The husband is our  house saucier, which is great for me, because sometimes I'm kind of a mess. Usually if I'm wearing white, I will be a disaster. But this soup just happened for me, sans spills, and the results? Pretty great.

Serving soup at a holiday party can be easy and in this case, appear rather festive. This is a sweet, yet savory soup that gets a creamy texture ( and high protein!) from the blended white beans. No cream needed.  I served it in small shooter style bowls so no spoon was needed.

Roasted Red Pepper White Bean Soup

Ingredients:

  • 1 small yellow onion
  • 2 medium carrots
  • 3 C chicken stock, low sodium
  • 1 red pepper, roasted
  • 8 oz white beans
  • salt
  • pepper
  • thyme
  • olive oil

Directions: Chop onion and carrots. Add to a pot with olive oil. Cook until onion is translucent.  Add thyme and chicken stock. Cover and simmer. Roast red pepper in the oven or quickly broil. Chop and add to pot along with the white beans. Allow to cook, covered, until vegetables have softened. Puree. Season to taste. Garnish with fresh parsley.
