Two Ingredient Cauliflower Soup
This is basically the last of warm soup season for me with spring filling the air. But this soup is such a good thing to keep in the freezer. It's just right for a 'Hell no. I'm not cooking today' menu. Two ingredient cauliflower soup could not be easier or more clean for your diet. There's no fat, lots of fiber and a great serving of antioxidants from this cruciferous vegetable. If I was a marketer, I would name this swim suit season diet detox soup to grab attention. But I think you and I both know that's not how I roll as a dietitian. Long story short: this soup is simple, clean, easy and can be a good tool for spring cleaning your eating habits.
Two Ingredient Cauliflower Soup
Ingredients:
- cauliflower, chopped
- chicken stock (I used homemade. I prefer the taste)
Optional Garnish: black pepper, parsley, roasted chickpeas with garlic
Directions: Chop fresh cauliflower and place in a soup pot. Cover with chicken stock (or vegetable stock if desired) and place a lid on the pot. Allow to cook until the cauliflower is soft. Using an immersion blender or regular blender, puree until all cauliflower chunks are smoothed.
To make this soup into a balanced meal, I added roasted garlic chickpeas on top for protein and black pepper for a bit of spunk.
