Can one ever go wrong with berries in a recipe? Me thinks not. Berry is a pretty universally liked flavor, plus they're packed with antioxidants, fiber and pair well with tons of different herbs. Popsicles are kind of a fun snack in a flash to have stored away in your freezer and can even be a healthy way to eat your produce if you're making them at home. This recipe uses blackberries and a few wineberries with mint and rose water. The rosewater works as a scent based flavor enhancer/sweetener....kind of in the way vanilla does. Example: anything vanilla scented or flavored automatically makes me think it's sweeter...even if the nutrition label shows it's not.

Side note: I look at this blog post and all I can think of is Berry, the devious strawberry from Cloudy With A Chance of Meatballs 2 (which has gorgeous story boards and illustrations). I basically am a six year old because I think that movie is awesome. Also, I'm dying to see the Lego Movie.

Blackberry Rose Water Popsicles

makes 4 zoku pops

/// Ingredients ///

  • 1 cup black berries
  • 2 cups raspberries or wineberries (used in this recipe but difficult to find in stores)
  • 1/2 cup simple syrup made with 1/2 monk fruit and 1/2 table sugar
  • 1/2 T rose water
  • 1/8 cup packed mint leaves

/// Directions ///  Purée all ingredients in a blender and spoon into popsicle molds. Freeze 6 hours.
