Cottage cheese is always shunned as a bland diet food. Confession time: I am in love with cottage cheese, yes even the 0% kind. It's a great way for be to get a ton of protein with less fat, while still indulging my cheese cravings. To really amp up cottage cheese, I love pickles as a pairing! Sure, people put berries as a side, but pickles are the perfect partner with a dash of black pepper.

Cottage cheese is also a good source of calcium, so if you find you're not a glass of milk kind of girl, this is a great way to make it happen. For perspective in terms of calories, one cup of fat free cottage cheese is under 150 calories. If I'm not having it with pickles, I will usually have it with shredded carrots, chopped tomatoes, celery and cucumber with fresh basil. It is an insanely good and light lunch during the summer!
