Fresh Healthy Pizza Rounds
I don't think at this point my love of pizza is a secret. But just like my love of mac and cheese, what it really comes down to is 'why do I love it?'. My answer for pizza, just like the mac and cheese, is that I love the combination of flavors. It's not the food itself. It's not specifically starch plus cheese. It's the flavor parts that make up that food...and I know I can make it healthier and be just as happy. Probably happier. Although, side note, I still love a slice of good pizza on occasion. But I won't settle for sub-par pizza. If you're going to eat a splurge or luxury food, treat it like a luxury purchase. Why settle for a knock off?
So here's the bottom line. Pizza love= acidic and sweet (tomato) + savory, creamy, salty (parm) + herbal (basil). Boom. Broke it down, re-built it and ate this gorgeousness.

- Tomatoes
- block of parmesan cheese, freshly grated
- salt and pepper
- fresh basil
/// Directions /// Slice tomatoes about 1/2 inch thick. Lay on parchment paper on a pan. Salt and pepper and grate fresh cheese on top. Bake at 400 F for 5+ minutes until the cheese begins to bubble and brown. If you want it super speedy, broil it. Top with fresh basil.
This food is comforting without weighing you down. It's just the thing to enjoy after, I don't know, let's say tearing down your two story deck. Last night the husband and I wrapped up demo on the second story mini-deck in our home restoration project. Let me tell you that removing a staircase is both very interesting and slightly mortifying. But now it's down, and now we eat healthy pizza and recover.
