Summer Berry Peach Oatmeal Breakfast
Hey. So... it has weirdly turned into breakfast week on the blog? Monday we had 5 ingredient savory french toast. Tuesday we had a German cake that is arguably delicious for breakfast with coffee. Today, we've got summer fruit oatmeal. I used to be the worst breakfast skipper and now here we are: talking about breakfast for a week straight. So let me just go get my knitting needles and walker and I'll BRB. Getting older does strange things to you.
As for this oatmeal I feel like the best way I can describe this to you is healthy summer fruit cobbler while my husband might simply call it 'all the fiber'. You're going to feel full and satisfied for a long time after this breakfast. Or heck, even dessert! Just add a dollop of yogurt or whipped cream.
I know the biggest issue people have with oatmeal is the time component. Sure, you can have quick oats, but the nutrition benefits just aren't the same. But guess what? I JUST found out Quaker is now making steel cut quick 3 minute oats moving the normal 30 minute cooking time to a mere three. Now you have no excuses!
Summer Berry Peach Oatmeal Breakfast
serves 1
/// Ingredients ///
- steel cut oats (cook to package directions)
- 1 peach, sliced
- 1/4 cup fresh mixed berries (whatever looks good at the market or outside!)
- fresh lemon zest
- brown sugar
- a sprinkle of ginger if you're feeling spicy
/// Directions /// Cook oats to package directions. I usually cook mine with water but if you need more calories or really like a creamy product, go with skim milk or a milk alternative. On top of the cooked oats sprinkle spices and brown sugar. Add the fruit and zest a bit of lemon over the top.
