This menu plan has only three recipes, but each is a meal unto itself. The menu focuses on transitional root veggies, winter and spring mixing with lighter flavors (citrus, herbs, olive oil). From breakfast hash with veggies and chorizo to an entire roasted chicken over veggies (one pan total!) each recipe stands alone easily. Here's to spring!
