A creamy, high protein summer dessert-like smoothie with berry graham cracker flavor that will remind you of a graham cracker crust cheesecake.
We just got a new fridge and the whole 'transfer things from the old fridge into the new one' dance has me realizing it's time to get back into using our smoothie ingredients. Nothing like an entire major area of your freezer dedicated to smoothie powders and frozen fruit to tell you that you have a smoothie habit you've been neglecting. A graham cracker habit however, is something I never forget. If a box of graham crackers makes its way into this house, it is GONE. I show no mercy- Chris gets no share of the graham crackers because I finish them before he realizes I've broken my little raccoon hands into the box (at this point in the marriage I have years of quiet graham cracker opening experience-so sneaky).
I will admit however, our smoothie habit is relatively boring. Said smoothie routine revolves almost entirely around banana peanut butter smoothies with a green smoothie alternate. I would say I rarely experiment with smoothie flavors any more, and I don't know if that's a residual reaction to working in the creative food direction for a smoothie company or pure laziness. But I was feeling exciting, so I made my second new smoothie recipe in two weeks (side note: we have also been watching our new Roomba vacuum so that's about the level of excitement we generally aim for).
This smoothie is smooth and creamy thanks to (as always) frozen banana as well as silken tofu (which you cannot taste so stop freaking out). For the fruit I did a blend of strawberry and raspberries...because that's what I had in my freezer...but you could do only strawberry, or raspberry, or blueberry or cherries and it would be perfect. You cannot, however, skip the graham crackers or vanilla. I think both are crucial to that 'cheesecake' flavor nod.
Healthy Berry Cheesecake Smoothie
- 1 1/4 cup vanilla almond/soy/whatever milk
- 1 teaspoon high quality vanilla extract
- 1 cup frozen berries
- 1/2 frozen banana, broken into chunks
- 1/4 cup silken tofu
- 2 full graham crackers
- Add ingredients to blender and blend until smooth.
