Homemade Herb Pasta with Veggies
How to make pasta at home with simple ingredients and a recipe for a lightly sauced herb pasta with vegetables
Making pasta at home has always been one of those ‘romantic’ kind of activities to me. It takes a lot of space and time and patience. And it’s not that I don’t enjoy recipes that require those things! I take a lot of pleasure in losing myself in a recipe, especially when that’s the activity I want to be distracted by.
But anything that requires it’s own machine is always iffy to me. You all know, we are very streamlined in our home. We don’t love unitaskers. For more on that, check out our life guides section to see how we organize our kitchen. And yet, after taking a pasta making class at a conference last year, I realized it actually is pretty simple. A well crafted pasta machine takes up no more space than a small set of mixing bowls. It’s really whether you use it or not that becomes key.
We opted for a very long lasting, simple hand crank machine where it’s up to you to adjust the thickness of the rolling as well as select what kind of shape you’ll cut your dough into. It’s exactly what it needs to be.
As for the pasta itself, it really is simple ingredients that can be modified. In this recipe we add herbs but you could add red pepper flakes, lemon zest or whatever else your heart desires. Herbs however, are something we constantly have growing in the garden and we know they’d compliment this light sauce that includes spunky mustard and vinegar.
With the rest of the pasta we used canned/jarred artichokes and bell peppers with walnuts. It’s a great way to use pantry items with a few fresh things to make a comforting, lighter but bold dish.
