To be honest, when I wrote this piece and recipe back in January/February I didn’t realize how useful it would end up being to people right now. That’s the weird side of an editorial calendar/recipe assignments. You build a plan months in advance, and sometimes they end up being more poignant than intended.
In our house, we love chicken thighs over chicken breast as a whole. Thighs, especially bone in, skin on, are less expensive than boneless, skinless chicken breast. We’ve cooked with thighs for the flavor and texture for years, but I know many households only opt for chicken breast. That’s gotta change- trust me, try this and I think your mind will be changed.
