Originally, we built this recipe for short ribs, which-while still not a super popular cut- far more typical than beef back ribs. It’s a good exercise in using what’s available and not relying or being beholden to one type of meat. There’s not a ton of meat on beef back ribs, but what’s there is amazing. To make beef back ribs a more enjoyable eating experience (tender, fall of the bone), you need to cook it for a long time…24 hours actually but I guarantee you it’s worth it.
