I love everything pumpkin. Not just pumpkin spice lattes. I'm talking true produce pumpkin dishes. Now that fall is here and it's more socially acceptable to sample all things cucurbita, I'm beginning the season with a true fall pumpkin smoothie filled with apple sauce, greek yogurt and general deliciousness.

Fall Pumpkin Smoothie (makes 2)

Ingredients:

  • 1 C pumpkin puree
  • 1/2 C cinnamon apple sauce
  • 3/4 C greek yogurt, 0%
  • 2 t pumpkin pie spice
  • graham crackers for topping
Directions: Add all ingredients to a blender and allow to whip. The smoothie will be best if all ingredients are cold, or better yet, if the apple sauce is frozen! Top with crumbled graham cracker and enjoy while wearing a cozy sweater.

This is how I envision true pumpkin dishes. It's not so dessert-sweet you can't bear to finish it. This is a savory, mellowed fall spice smoothie that is actually good for you! The pumpkin is full of vitamin A while the Greek yogurt is packed with protein. Oh and all of that apple sauce? Hello antioxidant polyphenols.
