Chocolate and peanut butter are a match made in heaven. But usually those two ingredients in one sentence can be a little careless in the health department. Not so much here. I made a creamy puddling like base of healthy beauty booster food avocado and banana with a little Greek yogurt to let the two tango. Trust me on this one.
Creamy Chocolate & Peanut Butter Avocado Pudding
- 1 avocado
- 1 banana
- 1/4 C 0% Chobani Greek Yogurt
- 2 Tablespoons peanut butter
- 2 Tablespoons unsweetened coco powder
- 1 teaspoon vanilla extract
- sugar or softened dates to taste
Directions: Remove the skin and pit from the avocado and add the flesh to the blender. Add the remaining ingredients and blend until completely smooth. Store in an airtight container and chill. Serve plain or with banana slices.
Thanks to the banana and avocado the final product is nice and creamy but without a high fat heavy cream. The cocoa powder is deeply chocolatey, but not in the way that most American milk chocolate is. You get to control how sweet the finished product is. You absolutely cannot taste the avocado, but there is a touch of banana...just mostly the nom nom of chocolate and peanut butter.
