Yesterday I shared a mini tart recipe that was sweet. Today I'll share the savory version of that exact same base and filling. Because you've gotta love an easy healthy hostess go to. This protein packed tart is topped with fresh spring peas and zingy lemon which is the perfect light balance.
Light Goat Cheese Tart with Spring Peas & Lemon
- 1/2 C Goat Cheese
- 1/4 C Greek Yogurt
- Spring Peas
- Lemon zest
- Sea Salt
- Phyllo Dough
- Butter, melted
Directions: Layer phyllo and butter and place into individual mini tarts. Bake per package directions. Whip goat cheese and Greek yogurt together with a hand mixer or in a standing mixer. Pipe into the mini tarts and top with blanched fresh spring peas. Zest a lemon over the top of all mini tarts and sprinkle with sea salt.
