Somewhere between Sandy, the ER hospital visits, and having no heat in our new house at this time, we've figured out dinner. One thing I can pat myself on the head for is my list making tendencies. Wunderlist is my BFF. Wunderlist comes with me to the grocery for a shopping list and menu writing. And pre-move in, I thought out what I would need for several days of dinners using the same ingredient purchases. Thank goodness, because in my 55 degree house, I don't think I can hold a pencil through gloves.

By planning ahead, I saved a ton of money at my Wegman's pilgrimage and we ate a clean and balanced dinner instead of take out. Albeit, with a very large bottle of Pinot Grigio.

Le Menu:

  • Herb roasted green beans with butternut squash and tuna cakes
  • Breakfast style egg in a frame with sauteed kale
  • Pizza quinoa with shredded cabbage vinaigrette
  • Whole wheat gnocchi with tomato sauce and garlic kale
  • Roasted chickpeas and quinoa with cheesy kale
  • Sweet potato fries, chopped kale salad, and baked Italian chicken (for husband)/ canelini beans (moi)
  • Mashed herb parsnips, sauteed green beans and breaded chicken (husband)/ marinated legumes (moi)
  • Vegetable omelets and toast
