Do you have to lose five pounds every year?), I know many readers are beginning their yearly vow to improve their health. But honestly, you don't need to make a resolution to start your morning in a healthy and delicious way. Which is why you should have a poached egg over a sauteed zucchini nest with oranges and whole wheat toast.

Yes, vegetables for breakfast. More fiber, more full more nutritious start to the day. I'm not crazy so try it maybe?

Breakfast Zucchini Poached Egg Nest


  • Egg
  • Vinegar
  • Zucchini
  • Olive Oil
  • Salt
  • Pepper

Directions: Simmer water and vinegar on the stove. Crack your egg and slip into the water without disturbing the shape. In a small pan, add sliced zucchini strips to a small amount of olive oil and sauté. Place in a round to shape. When your egg is poached, place gently on the zucchini nest and add salt and pepper to taste.
