Winter Quinoa Citrus Salad
Tis the season for fighting colds. Just ask the horrifically hacking cough sitting behind you on the Metro (cue skin crawling and hand sanitizer opening). This winter quinoa citrus salad is packed with vitamin C to help give your sniffles the boot...or help you replenish after tonight's merry making.
Originally seen on my Washingtonian food log feature, said salad is a favorite in our house for lunch. If you think you don't like salad, you're just not making it the right way. By mixing in quinoa for a balanced meal and bursting Florida citrus, eating a salad just got a little more fun.
Winter Citrus Quinoa Salad
Ingredients:
- quinoa
- grapefruit
- oranges
- mixed greens
- vinaigrette: olive oil, sugar, salt, pepper, cider vinegar, dijon mustard (1 tsp)
Directions: Cook quinoa and allow to cool. Slice citrus and place over greens. Add quinoa. To make vinaigrette, pulse in a cuisinart or whisk by hand to emulsify.
