When  California Almonds sent me oodles of almonds I was super excited for the package. But before I even got home, the husband had infultrated the package, snacked on some almond butter and there was a cat who already claimed the cardboard box. Almonds have that effect on people. Smooth, rich and nutty, almond butter is made with ONLY salt and almonds which lets the flavor shine through. Craving a sweet and nutty treat, we made almond butter cookies. The cat kept the box.

Almond Butter Cookies

Recipe via Almond Board of California , modified

Ingredients:

  • 3/4 cup all-purpose flour
  • 1/2 cup whole-wheat flour
  • 3/4 teaspoon salt
  • 1 teaspoon baking soda
  • 1/4 cup unsalted butter, softened
  • 3/4 cup smooth, unsalted almond butter
  • 1/3 cup packed light brown sugar
  • 1/3 cup granulated sugar
  • 1/2 teaspoon vanilla extract
  • 1 egg

 

Directions: To prepare cookies, preheat the oven to 375° F. Put parchment/Silpat on trays.

In a large bowl whisk together the flours, salt and baking soda. In another large bowl beat together the butter, almond butter and sugars until fluffy. Add the vanilla and egg, and beat until well combined. Gradually stir in the flour mixture, blending well.

Shape the dough into 3/4-inch balls, and place in a bowl of sugar. Place on a baking sheet and press down with a fork. Bake for 10–12 minutes, until lightly browned. Cool on a wire rack.
