Mexican food is notoriously high fat. Mostly because the American version of Mexican food involves multiple layers of cheese and salty chips. Don't even begin to rationalize ball park nachos to me. This skinny seven layer dip is what I make to celebrate Cinco de Mayo. It has healthy fats from avocado and 0% Chobani greek yogurt. It has double the lycopene from chopped tomatoes and salsa...and I couldn't miss a chance to shred some lettuce for more fiber. ​I picked whole wheat tortilla chips and for that touch of salt I added black olives to the top. Fiesta in a bowl.

Skinny Seven Layer Dip

  1. chopped cherry tomatoes
  2. black beans
  3. avocado, mashed
  4. salsa
  5. Chobani 0% Greek yogurt
  6. shredded lettuce
  7. black olives

Directions:​ Chop the cherry tomatoes and create the first layer in a glass bowl. Add each additional layer, smoothing the soft toppings like avocado so they cover the entire preceding layer. Store in the fridge until ready to serve with whole grain tortilla chips.
